Micro fennel’s thin, green, grass-like blades are finely textured and may have a few, edible, soft, brown seeds still connected to the tips. Micro fennel is tender and succulent with a lemony, black liquorice scent and a mild, green flavour with sweet notes and a peppery-anise finish. Micro fennel is used very similarly to regularly sized fennel – fresh and whole, popularly selected as a garnish and placed in small piles on top of dishes to showcase its delicate, thread-like texture.

What’s its story?
Fennel is native to southern Europe and the Mediterranean region, used for centuries as a vegetable and as a spice. Formerly exclusively available to high-end restaurant chefs in California in the ‘80s-‘90s, micro fennel enjoyed the microgreen culinary boom and happily – we imagine – accepted being referred to as vegetable confetti.
